Chocolate Peppermint Crinkle Cookies

Something sweet and delicious for the holidays. Add a peppermint Hershey’s Kiss into the center of each cookie for an extra bite of mint.

Ingredients

Makes 30 servings

  • 3 scoops Nutrimeal Active Chocolate
  • 1 cup of 1:1 gluten-free flour
  • ½ cup unsweetened baking cocoa
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • ½ cup granulated sugar
  • ¼ cup olive oil
  • 2 large eggs
  • ½ teaspoon vanilla
  • ½ teaspoon peppermint extract
  • ¼ cup powdered sugar 

Instructions

  1. In a medium bowl, mix Nutrimeal Active, flour, cocoa, baking powder, and salt. Set aside.
  2. In a large bowl, beat the granulated sugar, oil, eggs, vanilla extract, and peppermint extract with a whisk until well mixed.
  3. Stir the dry ingredients into the wet ingredients until just combined.
  4. Cover the bowl with plastic wrap and refrigerate at least 2 hours.
  5. Heat oven to 350°F.
  6. Line cookie sheets with parchment paper.
  7. Place powdered sugar in small bowl.
  8. Shape dough into tablespoon-sized balls.
  9. Roll balls in powdered sugar until coated.
  10. Place on cookie sheet ~ 1 ½ inches apart.
  11. Bake 10–12 minutes until cookies crackle.
  12. Cool cookies on cooling rack.
  13. Optional: press a peppermint Hershey’s Kiss into center of each cookie.
